Zucchini and Herb Angel Hair Pasta with Chicken

Fresh and light for a summer night :) Plus, I finally bought a hand-held Mandolin slicer and I really wanted to use it! ;)

INGREDIENTS
  • 1 large zucchini, sliced thinly in long stripes (using the Mandolin cutter)
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 1/2 - 3/4 cup chicken broth
  • 2 chicken breasts, diced to bite-sized pieces
  • angel hair pasta
DIRECTIONS
  1. Melt butter in a large skillet. Add onion and garlic.
  2. Add chicken and cook on medium heat until almost cooked through.
  3. Add sliced zucchini and chicken broth, cover, and cook for an additional 10 minutes, or until zucchini is soft.
  4. Meanwhile, boil water and cook pasta according to package directions.
  5. Pour zucchini and chicken mixture, liquids included, over strained pasta, using it as the sauce as well.
