INGREDIENTS
- 1 large zucchini, sliced thinly in long stripes (using the Mandolin cutter)
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1/4 cup butter
- 1/2 - 3/4 cup chicken broth
- 2 chicken breasts, diced to bite-sized pieces
- angel hair pasta
- Melt butter in a large skillet. Add onion and garlic.
- Add chicken and cook on medium heat until almost cooked through.
- Add sliced zucchini and chicken broth, cover, and cook for an additional 10 minutes, or until zucchini is soft.
- Meanwhile, boil water and cook pasta according to package directions.
- Pour zucchini and chicken mixture, liquids included, over strained pasta, using it as the sauce as well.
