Dutch Oven Pork Roast

This was all on my list of "ok foods to eat!" And this was the first time I've ever made a pork roast... we actually all really enjoyed it! Even my 2.5 year old went back for seconds (and if you know her, unless it's cake or chocolate, that's rare! ;)

INGREDIENTS
  • 5lb pork roast
  • 3 medium potatoes, diced
  • 1/2 lb baby carrots
  • 1 cup frozen diced onions
  • 1 apple, sliced thin (about 16 slices)
  • Garlic and cinnamon to taste
  • 2 tbsp pure vegetable oil
DIRECTIONS
  1. Preheat oven to 350.
  2. On the stovetop, pour oil in a large Dutch Oven and brown pork on both sides.
  3. Remove meat and add onions, carrots and potatoes and cook for about 5 mins.
  4. Put pork back in, on top of vegetables and potatoes.
  5. Spread apple slices around and on top of pork.
  6. Sprinkle garlic and cinnamon to taste.
  7. Tightly cover w/ foil and bake for around 2.5 hours.
