INGREDIENTS
- 5lb pork roast
- 3 medium potatoes, diced
- 1/2 lb baby carrots
- 1 cup frozen diced onions
- 1 apple, sliced thin (about 16 slices)
- Garlic and cinnamon to taste
- 2 tbsp pure vegetable oil
- Preheat oven to 350.
- On the stovetop, pour oil in a large Dutch Oven and brown pork on both sides.
- Remove meat and add onions, carrots and potatoes and cook for about 5 mins.
- Put pork back in, on top of vegetables and potatoes.
- Spread apple slices around and on top of pork.
- Sprinkle garlic and cinnamon to taste.
- Tightly cover w/ foil and bake for around 2.5 hours.
