I used refrigerated natural PB, which is thicker/harder so I thought for sure it would stick in the blender...nope! It all blended right up really easily. All I had to do next was pour it straight from the blender to the muffin tin. Really can't get any easier than this! Even better, they're gluten free, which means my 6 year old can eat them!<br />

I'll admit, I wasn't so sure about how these would turn out... but both my girls ate one and immediately asked for a second! They're a hit! I liked them too, but I think I might add some chocolate chips in next time ;)<br />

<li>1 cup shredded carrots</li>
<li>1/3 cup Italian style bread crumbs</li>
<li>1/4 cup creamy Italian dressing</li>
<li>1 egg</li>
</ul>
DIRECTIONS<br />
<ol>
<li>Drain the chickpeas and rinse thoroughly. Pick out any loose "skins".</li>
<li>Mash the chick peas till they form a paste.</li>
<li>Shred the carrots in a mini food processor.</li>
<li>Combine together, then add bread crumbs, Italian dressing and egg. Mixing together very well.</li>
<li>Take about one tablespoon of the mixture, roll it into a ball, then flatten into a nugget shape, repeat.</li>
<li>Place nuggets on parchment paper or a greased cookie sheet and bake at 375 for 15-18 minutes or until nuggets are browned on both sides. Turn about halfway through baking.</li>
<li>Makes about 18 nuggets, give or take.</li>
<li>Serve with assorted dipping sauces. </li>

<li>Remove from blender and roll into small balls (about 1/2 in diameter or so).</li>
<li>I put these in a glass container and keep them in the fridge. A batch rarely lasts more than 1/2 a week! </li>

For some reason, I find it hard to pack good lunches for her...and it takes me a while to pack them! Next year she'll be in kindergarten (!!!!). DIRECTIONS <br />

<li>Preheat oven to 350°F. </li>
<li>Mix oats, flour, baking soda and salt in a medium bowl. </li>
<li>Beat butter in a
large bowl with an electric mixer until fluffy. </li>
<li>Add oil, stevia, brown sugar, egg and vanilla and beat until smooth and creamy. </li>
<li>With
the mixer running, add the dry ingredients, beating on low speed until
just combined. </li>
<li>Stir in chocolate chips.</li>
<li>Scoop about 1 tbsp worth of dough out and shape into a ball</li>
<li>Press down onto a baking stone.</li>
<li>Bake for approximately 20 minutes, then transfer to a wire rack to cool.</li>

INGREDIENTS<br />
<ul>
<li>1lb pasta or choice</li>
<li>1 can black beans, drained and rinsed</li>
<li>1
10oz package frozen corn </li>
<li>2 medium tomatoes, seeded and diced</li>
<li>8oz shredded Mexican-blend cheese</li>
<li>1 1/2 cups salsa</li>
<li>1/2 cup olive oil</li>
<li>4 tbsp lime juice</li>
<li>1 tbsp cumin</li>
<li>1/2 tsp chili powder</li>
<li>1 tsp garlic powder</li>
<li>salt, to taste</li>
<li>1/2 cup chopped fresh cilantro </li>
<li>1 avocado, diced</li>
</ul>
DIRECTIONS<br />

<li>Cook the pasta al dente according to package directions.</li>
<li>Drain and rinse with cold water.</li>
<li>In a large bowl, combine the black beans, corn, tomatoes, salsa, and cheese. </li>
<li>Add the cooled pasta and mix well. </li>
<li>In another bowl, whisk together the olive oil, lime juice, garlic,
cumin and chili powder. </li>
<li>Pour over the pasta salad, add the cilantro, and
mix well. </li>
<li>Season to taste with salt. </li>
<li>Just before serving, stir in the diced avocado. </li>
