Kale Chips

Kale is such a superfood.. there probably aren't many other things that are better to eat then kale. I'm trying to cook with it more and more and heard about how easy and yummy kale chips were. A little skeptic, I tried them anyway.... and I'm so glad I did!

These were a huge hit! I loved them, my mom loved them, my 2 year old daughter loved them and kept asking for more. I'll definitely be making these often :) What a great healthy snack!

INGREDIENTS
  • A bunch of kale
  • olive oil
  • Mrs. Dash (or whatever seasoning you want.. salt, salt & garlic)
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Cut kale into bite-sized pieces, removing the center stem.
  3. Wash well, then completely dry in a salad spinner.
  4. Lay parchment paper on a cookie sheet and thinly spread kale across, making sure they're not bunched on top of each other.
  5. Drizzle with a little olive oil and seasoning of choice.
  6. Bake for 10-14 minutes, until kale is crisp but not burnt.
  7. Enjoy!

oh, yeah, and we've deep fried it-or really just "flash" fried it!
