Baked Salsa Chicken w/ Black Bean and Corn Salad

Trying to clean out the pantry so I decided to throw things together. That turned into Baked Salsa Chicken w/ Black Bean and Corn Salad! :)

INGREDIENTS
  • Chicken Tenderloins
  • 1 jar of mild salsa
  • 1 can black beans
  • 1 can whole corn
  • shredded cheddar cheese (optional)
DIRECTIONS
  1. Preheat oven to 375.
  2. Spray a 9x9 baking dish with cooking spray.
  3. Place a single layer of chicken in the dish.
  4. Drain black beans and corn in a strainer, then rinse until water runs clear.
  5. Evenly pour the bean and corn mixture on top of the chicken.
  6. Top with the jar of salsa.
  7. Bake uncovered for 45 minutes.
  8. Sprinkle with cheddar cheese and serve.
