INGREDIENTS
- 1/2 large onion, diced
- 1 green bell pepper, diced
- 2 medium summer squash (or zucchini), halved lengthwise and sliced thinly
- 1 bunch carrots, sliced
- 1/2 C red lentils
- 1/2 C yellow split peas
- 1/2 C barley
- 1 can diced tomatoes
- 4 C vegetable broth
- 1/2 t salt
- added water, as needed
DIRECTIONS
- Layer ingredients in a slow cooker, in order as listed above.
- Cook on low for 8 hours or on high for 4.
- Add water as needed (I ended up using a bag of frozen onions and bell peppers and didn't need to add any water).
