Cream Cheese Spinach Stuffed Chicken

I have a ton of fresh baby spinach that needs to be used! Thankfully, my husband will actually eat it if I put it IN a meal (no spinach salads for him!) ;) I decided to mix some cream cheese in with the spinach to make it a little different..
INGREDIENTS

4 cups lightly packed baby spinach
2 clove garlic minced
2 tsp. olive oil
2 chicken breasts, pounded out thin
2 tbsp cream cheese
1 tsp oregano
1 tsp Mrs. Dash Original

DIRECTIONS

Preheat oven to 400 degrees.
In saucepan cook spinach, garlic, and oregano in olive oil until spinach is wilted.
Place chicken breasts in a gallon-sized ziplock bag and pound t to 1/4-1/2" thickness.
Take spinach and mix in cream cheese.
Spoon half of the spinach mixture down center of each breast.
Roll up and secure with toothpicks.
Sprinkle with Mrs. Dash.
Place chicken in a shallow baking dish.
Bake about 40 min. or until chicken is cooked through.
