
2 chicken breasts, cut into thin strips
1 bell pepper, cut into thin strips
1 package instant brown rice, chicken flavored
1/2 cup BBQ sauce
1/2 tsp soy sauce
1/2 tsp olive oil
shredded cheddar cheese, optional
DIRECTIONS
Heat olive oil in a large skillet.
Add chicken and brown.
Slice bell pepper and add to skillet.
Add soy sauce and BBQ sauce.
Cover skillet and cook on medium high heat for about 10 minutes.
Cook instant rice and place on plate.
Spoon chicken mixture over rice. Add cheese if so desired.
