Pineapple Chicken

This has been an all-time favorite of mine since college. Super easy and quick to make and delicious! It's also usually my go-to meal to bring to people who have newborns, etc.. and I've made it in large portions for b-day dinners and Luau parties!
Pineapple Chicken

INGREDIENTS

* chicken cut into cubes
* canned pineapple chunks, drained
* garlic powder, to taste
* cinnamon, to taste. I probably usually put in 1/2 tsp
* dash of paprika
* salt, to taste
* pepper, to taste
* olive oil

* rice

DIRECTIONS

Cut chicken into cubes. Pour some olive oil in a pan and cook chicken on medium high heat.
While cooking, mix in garlic, cinnamon, paprika, salt and pepper.
When chicken is almost done, add in pineapple (drained).
Cook until heated through and chicken is no longer pink in center.

Serve with rice. You can save the pineapple juice to cook the rice in (1/2 juice, 1/2 water) or I often use the Uncle Ben's instant rice packets that take 90 seconds to cook in the microwave.
