INGREDIENTS
- 2 large potatoes, diced
- 1 large leek, chopped up
- 2 cups broth
- 1 cup water
- 1 tbsp butter
- 1 tbsp dried parsley
- 1 tsp dried thyme
- garlic, to taste (I used 1 tsp minced)
- salt (and pepper) to taste
- cook leeks in butter for about 10 minutes.
- add all ingredients to a large pot and bring to a simmer.
- simmer for 20 minutes.
- using an immersion/stick blender, blend, leaving some chunks.
