Bruschetta Pasta


I was just throwing some ingredients together for an easy pasta dinner and I realized that I must be craving bruschetta or something because all the ingredients were there, pasta substituted for bread ;) It turned out great!

INGREDIENTS

2 large tomatoes, diced (I only had one but I think it would be much better w/ 2)
1/2 large onion, diced
3 cloves of garlic, crushed
1/4 cup olive oil
Pasta of choice for 2-3
1/2 cup shredded mozzarella cheese

DIRECTIONS

Heat water in a pot and cook pasta according to package directions.

Dice onion and crush garlic.
Heat olive oil, onion and garlic over medium heat. Bring to a simmer.
Add diced tomatoes and simmer for about 5 minutes, stirring occasionally. Watch carefully because this will burn easily.

Mix pasta with sauce and serve on plates.
Sprinkle cheese evenly over pasta while still hot so cheese melts.
Enjoy!

Mmmmm... this looks yummy and so easy! If I hadn't already planned dinner for tonight, we'd definitely be having this! :)
