My cooking blog.
Quick and easy meals from a SAHM of a 2 little girls, 20 months apart!
I use this as my personal online cookbook. It's simple and easy to access, nothing frilly about this blog, but please feel free to follow if you'd like :) I started it because it's much easier than searching through multiple places for a recipe or printing out a million recipe pages ;)

Goat Cheese Stuffed Figs wrapped in Prosciutto
I was watching Home Made Simple and they made a delicious sounding appetizer that was so easy to put together, not to mention healthy and yummy. How could I not try it! The prosciutto wrapped on the outside gets crispy and gives it a salty taste, while the melted cheese makes it creamy and the figs give it a bit of a sweet flavor.
INGREDIENTS
(I ended up making this at my parents house just using ingredients they had laying around..meaning regular thin sliced ham instead of prosciutto. It still turned out pretty great!)
* dried or fresh figs
* fresh goat cheese
* prosciutto
DIRECTIONS
Stuff figs with goat cheese then wrap in prosciutto. Bake at 350 for around 10 minutes, until the outside is nice and crispy and the cheese has melted on the inside.
* Goat cheese works well as it melts easily. Other cheese options are blue cheese or mozzarella.
