Cheesy crusted pork loin

I had a thick piece of pork in my freezer and decided to throw this together. Since it was still partially frozen by the time I went to cook it, I sliced it width-wise for smaller (faster cooking) chunks :)

INGREDIENTS
  • pork loin, sliced to 1 inch pieces
  • 1 egg white
  • bread crumbs
  • shredded cheese
  • garlic powder
DIRECTIONS
  1. Preheat oven to 350.
  2. Mix bread crumbs, cheese, and garlic in a gallon sized zip lock bag
  3. Dip sliced pork pieces in egg white, then place in zip lock bag.
  4. Seal. Then shake, shake, shake!
  5. Lay pork flat on baking stone and sprinkle leftover crumb/cheese mixture over top.
  6. Bake for 45 mins, or until cooked through.
I served this with green beans and pan fried potatoes.

Apple Roasted Pork Tenderloin

So so good!

INGREDIENTS
  • 1 pork tenderloin (about 1.5 lbs)
  • olive oil
  • 1 large yellow onion, diced
  • 3 sweet potatoes, sliced
  • 2-4 apples, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup apple juice
  • salt and pepper to taste

DIRECTIONS

  1. Preheat oven to 375
  2. Heat olive oil in a Dutch oven. 
  3. Brown the pork on both sides, about 3 minutes each. Then remove from the pot.
  4. Add chopped apples, onion and garlic and cook until translucent.
  5. Put the pork back in and top with salt and pepper.
  6. Add sweet potatoes, 1 cup of apple juice and 2 cups of chicken broth, mix well.
  7. Cover Dutch oven with foil and place in oven.
  8. Bake for about 2 hours, until pork is cooked through.

Carrot-Apple Wok Pork

Trying to change things up from all the chicken I make... :)

INGREDIENTS
  • 3 pork cutlets
  • 4 carrots, peeled and sliced
  • 2 apples, sliced
  • 1/2 large yellow onion
  • 2 garlic cloves, crushed
  • 1 cup chicken broth
  • 1/4 cup orange juice
  • 1 tbsp olive oil
  • 1 tsp butter
  • salt, to taste
  • sprinkle of nutmeg
DIRECTIONS
  1. heat up oil and butter in wok.
  2. brown onions and garlic.
  3. add pork and lightly brown on both sides.
  4. add chicken broth, OJ, and carrots.
  5. Bring to a boil, then cover and simmer for 15 mins.
  6. Add apples, recover, cook for another 10 mins.
Served with pan fried potatoes. Yum!

Spiced Pork and Apricot Stew

Ingredients

  • 2 pounds boneless pork shoulder or butt, trimmed of excess fat and cut into 2-inch pieces
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • kosher salt and black pepper
  • 1 medium onion, peeled and diced
  • 2 cups low-sodium chicken broth
  • 4 tbsp strawberry or apricot preserves
  • 1 tablespoon cider vinegar
  • 1 15-ounce can chickpeas, rinsed
  • ½ cup dried apricots, halved
  • 1 cup baby carrots
  • cooked couscous, sliced scallions, and chopped roasted almonds, for serving

Directions

  1. In a large slow cooker, mix spices and onion with pork.
  2. Add chicken broth, preserves, vinegar, carrots, chickpeas and dried apricots. 
  3. Cook on low for 6 hours. 
  4. Serve over couscous.

Dutch Oven Pork Roast

This was all on my list of "ok foods to eat!" And this was the first time I've ever made a pork roast... we actually all really enjoyed it! Even my 2.5 year old went back for seconds (and if you know her, unless it's cake or chocolate, that's rare! ;)

INGREDIENTS
  • 5lb pork roast
  • 3 medium potatoes, diced
  • 1/2 lb baby carrots
  • 1 cup frozen diced onions
  • 1 apple, sliced thin (about 16 slices)
  • Garlic and cinnamon to taste
  • 2 tbsp pure vegetable oil
DIRECTIONS
  1. Preheat oven to 350.
  2. On the stovetop, pour oil in a large Dutch Oven and brown pork on both sides.
  3. Remove meat and add onions, carrots and potatoes and cook for about 5 mins.
  4. Put pork back in, on top of vegetables and potatoes.
  5. Spread apple slices around and on top of pork.
  6. Sprinkle garlic and cinnamon to taste.
  7. Tightly cover w/ foil and bake for around 2.5 hours.

Gravy Baked Pork Chops


I don't make pork very often. Rarely. But I'm finally starting to get a taste for it after years of disliking pork... Trying something new! :)

This recipe is from allrecipes.com. Gravy Baked Pork Chops

INGREDIENTS
  • 4 pork loin chops
  • salt and pepper to taste
  • garlic powder to taste
  • butter
  • 1 can of cream of mushroom soup
  • 3/4 cup milk
  • 1/4 cup water
DIRECTIONS
  1. Preheat oven to 350.
  2. In a skillet, melt butter and brown pork on both sides for 5 minutes.
  3. Add salt, pepper and garlic as meat is browning.
  4. In a bowl, mix soup, milk and water.
  5. Spray olive oil into a baking dish and put in the pork chops.
  6. Pour soup/gravy mixture over meat.
  7. Bake for 45 minutes or until meat is cooked through.

Pulled Pork Sandwiches

I found this recipe on thenest.com, posted by living_insanity

Sounded great so I thought I'd give it a try :) Below is her recipe. I made it a while ago and had enough for 3 meals out of a 2 lb pork butt. I can't remember exactly how long I cooked it for, but I just guesstimated times and amounts based on how much I was making. Since it was so long ago, I am just going to copy/paste her recipe instead of try to guess how I did it.

It was sooooooo so good!

"I buy a 6-8 pound pork butt (to feed a lot of people) and even then I ALWAYS run out and never have leftovers.
1 liter of cheap cola
a few bottles of BBQ sauce
I put the pork in my crockpot, cover the pork with the cola
cook on low for about 10 hours. If you buy a smaller piece of meat, you will need to cook it for less time.
Then I pull the pork out (It should be falling apart into pieces, thats how I know mine is really done) and I shred it. I dump out my liquid, put the pork back into the crock with the BBQ sauce and put it on warm. I stir it up several times until its all warm throughout."

Kielbasa Soup

Recipe from Fix-It and Forget-It Cookbook, by Dawn J. Ranck and Phyllis Pellman Good.
A bit greasy, but what can you expect from kielbasa..

INGREDIENTS

16-oz pkg. frozen mixed vegetables, or your choice of veggies.
6-oz can tomato paste
1 medium onion, chopped
3 medium potatoes, diced
1 1/2 lbs. kielbasa, cut into 1/4-inch pieces (I used 2 pieces of packaged kielbasa)
4 qts. water (I just filled the rest of the crockpot up with water after adding all the ingredients)
fresh parsley

DIRECTIONS

Combine all ingredients except parsley in large slow cooker.
Cover and cook on Low for 12 hours.
Garnish individual servings with fresh parsley.

Bratwurst (Kielbasa)-Potato Skillet Dinner

Original recipe calls for bratwurst but since my husband loves kielbasa so much I decided to make it with that instead... I also made a few other minor changes. It turned out delicious!!!! Especially the potato/vegetable mixture. We had a little saved over and I enjoyed it for lunch the next day.
INGREDIENTS

2 tsp olive oil
2 medium potatoes, sliced thinly
1 fully cooked kielbasa
1 small onion, chopped
1 chopped green bell pepper

2 tbsp soy sauce
1 tbsp orange juice
1/2 tsp dried basil
1/4 tsp salt
1/8 tsp black pepper

DIRECTIONS

In a heavy skillet, heat the oil over medium heat.
Cook the potatoes until they are lightly browned and crisp-tender, about 6 minutes.
Add the bratwurst/kielbasa, onion and green bell pepper.
Stir occasionally, cook until vegetables are tender and heated through, about 10 minutes.Combine the soy sauce, orange juice, basil, salt, and pepper in a small bowl.
Stir the sauce mixture into the meat and vegetables, and heat through.
