Homemade Luna Bars

Warning: These are addicting!



Original Recipe is from Frugal by Choice, Cheap by Necessity
Make sure to check out her recipe, which includes cocoa and is rolled in coconut! Both my girls and I actually preferred these w/out the cocoa, despite all being chocolate addicts ;) But it's still worth a try to include it :)

INGREDIENTS
  • 15 dates
  • 1/2 cup dried cranberries
  • 1/2 cup chia seeds
  • 1.5 cups raw almonds
  • 1/2 tbsp vanilla
DIRECTIONS
  1. Put all ingredients in a Vitamix blender (or food processor) and pulse until it combines.
  2. Continue processing while pushing down with the Vitamix stir stick thing (I'm all technical here ;) until it forms a nice dark colored chewy textured ball.
  3. Remove from blender and roll into small balls (about 1/2 in diameter or so).
  4. I put these in a glass container and keep them in the fridge. A batch rarely lasts more than 1/2 a week!

Banana Quinoa “Rice” Pudding

Recipe from Weelicious. If you haven't checked out this website, and you have kids, it is a must! Such great recipes and food-information for babies through adulthood ;)


INGREDIENTS
  • 1 Cup Quinoa
  • 1 14 oz Can Light Coconut Milk
  • 1 Cup Milk
  •  2 Ripe Bananas, mashed
  •  3 Tbsp Honey
  •  1/2 Tsp Cinnamon
  • 1/2 Tsp vanilla extract (the only thing I added to the original recipe)
DIRECTIONS

1. Place the quinoa in a strainer and rinse with water.
2. Place quinoa, coconut milk and milk in a medium saucepan and bring to a boil.
3. Cover and simmer for 15 minutes.
4. Stir in the remaining ingredients and cook over medium heat for 4-5 minutes stirring continuously until thickened.
5. Pour into individual ramekins and chill for 1-2 hours.

* The pudding can also be served warm.

Crepes

Yum yum yum! I've been craving crepes for a while now, so I thought I'd give it a shot at making some tonight :)

INGREDIENTS
  • 2 eggs
  • 2/3 cup flour
  • 1 1/4 cups milk
  • 1 tbsp ground flax seed
  • 1.5 tsp vegetable oil
DIRECTIONS
  1. Blend ingredients in a blender.
  2. Oil a pan over medium high heat.
  3. Once hot, pour batter in pan and cook around 2-3 mins per side, flipping when edges start to curl up.
Serve with filling of choice! Tonight these were for dessert so I spread Nutella and added sliced bananas before rolling them up. So good!

Peanut butter Chocolate Candy Bars

This recipe, found on Momma Hens Kitchen blog, looked way too good to pass up! It was super easy to make. Just don't be like me and try licking the spoon too early and burn your entire mouth...corners included! ;)

INGREDIENTS
  • 3/4 cups crushed Ritz crackers
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, cubed
  • 1/6 cup milk
  • 1 sleeve Ritz crackers
  • 1 cup semi-sweet mini chocolate chips
  • 3/4 cups peanut butter
DIRECTIONS
  1. In a large saucepan, mix together the cracker crumbs, sugars, butter and milk.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Cook and stir for another 5 minutes
  4. Line a 9x9 baking dish with foil and spray with cooking spray.
  5. Place a single layer of crackers along the bottom.
  6. Top with crumb mixture, then add another layer of crackers.
  7. Combine the chocolate chips and peanut butter in a microwave safe bowl and microwave for about 2 minutes. Be sure not to overcook or the chocolate will burn.
  8. Stir into a smooth mixture and pour over the crackers.
  9. Refrigerate until firm. Cut into bars and enjoy!

Kylie's Berry FrozenYogurt

A healthy treat: fun to make and yummy to eat! Toddler approved ;)

INGREDIENTS
  • 2 cups original organic yogurt (next time I think I'll use Vanilla)
  • 1 cup frozen blueberries
  • 1 cup frozen raspberries
  • 1/4 cup sugar
DIRECTIONS
  1. Put ingredients in a blender and puree.
  2. Pour into 2 oz popsicle molds.
  3. Freeze.

Blueberry & Strawberry Triffle


My first time making a triffle.. and yum!

INGREDIENTS

2 cups fresh blueberries
1 loaf pound cake
1 box of frozen strawberries
1 box of regular Cool Whip

DIRECTIONS

Thaw Cool Whip and frozen strawberries ahead of time.
Dice pound cake.
Layer pound cake, strawberries with the juices, blueberries, then Cool Whip.
Repeat.
