Breakfast cookie

I don't know about you, but my kids don't want to take the time to eat breakfast before school. Something easy to grab and eat is key! You don't have to feel guilty about giving them these cookies for breakfast ;)

Ingredients

  • 2 cup old fashioned oats, pulsed into flour
  • 1/2 cup flaxseed meal
  • 1 tsp ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1/2 cup butter softened
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 cup cranberries or chocolate chips

Instructions

  1. Preheat oven to 350 degrees; then in a large bowl, mix together butter, white and brown sugar, eggs, honey, cinnamon and vanilla extract.
  2. In a medium bowl mix together oat flour, flax seed meal, baking powder, baking soda and  salt.
  3. Add dry ingredients into wet ingredients, until all is combined.
  4. Mix add-ins into the cookie batter.
  5. Spoon tablespoons of batter onto baking stone.
  6. Bake for 10-12 minutes or until bottoms are lightly browned.
